The gas mark column maps to the friendly Celsius and Fahrenheit numbers cooks actually set, which is why the °C and °F figures do not convert to each other exactly (350°F is really 177°C, rounded to 180°C). Domestic ovens are nowhere near accurate enough for those few degrees to matter. Fan ovens run hotter for the same dial, so the fan column sits about 20°C below the conventional one. Gas mark inputs snap to the whole marks; typing between marks reads the nearest. About 200°C conventional, so 180°C fan, which is gas mark 6.
